The almighty sofrito- The heart and soul to a great latin meal. Before I tell you how to make this life changing sauce, I will say that every family has their own version of it. It’s one of those things that everyone puts their own spin on, I don’t want abuelas or tias getting mad at me ;) This a great base for soups, beans, marinades and rice. The holy grail of Latin food!
Yield: 2 cups
Here's What You Need:
1 cilantro bunch
1 large white or red onion
4-6 garlic cloves
1 bell pepper (either red or orange)
3 aji dulce (sweet peppers)
1/4 cup olive oil
Optional: 1 scotch bonnet pepper for heat
Here's What You Do:
Wash, peel and rough chop all the ingredients. Place in a food processor and blend until smooth puree. Freeze it in ice cube trays for a longer shelf life or keep it in the fridge with a tight lid.
