The almighty sofrito- The heart and soul to a great latin meal. Before I tell you how to make this life changing sauce, I will say that every family has their own version of it. It’s one of those things that everyone puts their own spin on, I don’t want abuelas or tias getting mad at me ;) This a great base for soups, beans, marinades and rice. The holy grail of Latin food! 

Sofrito

Yield: 2 cups

Here's What You Need:

  • 1 cilantro bunch

  • 1 large white or red onion

  • 4-6 garlic cloves

  • 1 bell pepper (either red or orange)

  • 3 aji dulce (sweet peppers)

  • 1/4 cup olive oil

  • Optional: 1 scotch bonnet pepper for heat

Here's What You Do:

  1. Wash, peel and rough chop all the ingredients. Place in a food processor and blend until smooth puree. Freeze it in ice cube trays for a longer shelf life or keep it in the fridge with a tight lid.
