Pan De Bono | Colombian Cheese Bread

Difficulty: Easy  Yields:  8-12 rolls   Prep Time: 15 mn Cook Time:  15 mn


  • 2 cup tapioca flour

  • 2 tsp precooked white cornmeal

  • 2 cup queso fresco or shredded mozzarella

  • ½ cup feta cheese

  • 1 teaspoon baking powder

  • Pinch of salt

  • 2 tsp granulated sugar

  • 2 egg

  • 4 tbs butter, room temp

  • Milk as needed

  • Guava jam to spread of to rolls when done


Preheat oven to 400. In a food processor, add all the dry ingredients together and pulse until combined. While mixing, add one egg in at a time and the butter. Dough should start coming together away from the sides. If not, add a few tablespoons of room temp milk until it comes together.

Allow dough to rest for 10 minutes. Separate dough into 12 small balls or 8 large. Bake for 12-15 or until golden brown. Allow to rest. Best served warm.
