Spanish Red Beans

SPANISH STYLE RED BEANS

Difficulty: Easy  Yields:  4   Prep Time: 15 mn Cook Time:  20-30 minutes

Ingredients:       

  • 2 tbs olive oil

  • 1/4 cup sofrito

  • 2 tbs sazon with annatto (about 1 packet)

  • 1- 15 oz can small red beans, rinsed

  • 1 cup tomato sauce

  • 2 cups water or vegetable stock

  • 1 tsp ground cumin

  • 1/2 tsp oregano

  • 1 bay leaf

  • salt and pepper to taste

Directions:

Preheat a pot over medium heat with olive oil. Add sofrito and cook until fragrant. Add sazon and tomato sauce, cook for about 2 minutes stirring every few seconds. Add the remaining ingredients, bring to a boil and reduce to a simmer. Cover and cook for another 15-20 minutes. Serve with white rice or plantains.
